Is there a any good way I can know if the wheels are sliding so I can add skidmarks?
Or should I check the cars acceleration and sideways movement?

It would probably be easiest overall just to find a combination of external conditions like acceleration and sideways movement to determine skidding. Currently, vehicle wheels are a shallow simulation of actual wheels; most of the factors that go into producing realistic skids and other phenomena are absent.
This is part of the reason why I want to re-do the Vehicle. The new version would simulate things closer to how real-life works, so working with them and extracting relevant information would be a lot simpler.
